They respond to care land attention If you give them ]the needed attention, they'll make money for you. Lets get the poultry house in order ventilation just right, no drafts, plenty of feeder and wa:er- ers. Build up the floor liter to a depth of six to eight inches. CRAB AND RICE SOUFFLE % cup butter or margarine 4 cup flour 1 teaspoon salt teaspoon pepper 1 cups milk 1 cup (6 oz. can) crab meat, flaked 2 cups cooked rice 4 eggs, separated all at once, stirring constantly until smooth Cook until thickened, stirring constantly. Add some of the hot mixture to the beaten egg yolks and mix thoroughly. Add to hot sauce and cook about 2 min- utes longer over low heat. Remove from heat. Fold in crab meat, rice, and lemon juice. Beat egg whites until stiff but not dry. Fold in rice-crab mixture. Pour into ungreased 1-quart casserole or 10x6x2-inch baking dish. Set in pan of hct water. Bake 1 tablespoon lemon juice . in moderate oven (350 F.) about Melt butter in saucepan; stir ht i 40 minutes or until firm. Serve flour, salt, and pepper, Add milk I immediately.
